Caprese Salad Love

Here are a few great ways to savor all the fresh tomatoes that are just now ripening on the vines.  Nothing like summer tomatoes.  Seldom do we eat store bought tomatoes but when the fresh ones start to come in we gorge ourselves everyday.

Ingredients
Vegetarian, Gluten free.  Serves 8-10

1 generous bunch Basil, fresh leaves
 4 Hothouse tomatoes

2 cups Balsamic vinegar

1 Sea salt and fresh ground black pepper, coarse

1 Olive oil, extra-virgin

2 (16 oz.) logs of fresh mozzarella cheese
